Lotus of Siam exits Red Rock dining lineup

One of Las Vegas’ best-known restaurants is leaving Red Rock Resort as Station Casinos reshuffles its Summerlin dining mix.

Lotus of Siam and Naxos Taverna are leaving Red Rock Resort, while the Oyster Bar is set to reopen on Oct. 30, according to Station Casinos and KLAS. The latest shakeup marks another notable turn in Summerlin’s resort dining scene, where restaurant changes can quickly reshape where locals choose to eat.

Lotus of Siam has long carried outsized weight in Las Vegas food culture, so its departure from Red Rock is more than a routine lease change. For diners, it means a familiar name is moving out of one of the valley’s most visible off-Strip resort properties.

The Oyster Bar’s return gives the resort a different kind of draw, one built around a known favorite rather than a headline-grabbing brand. In a market where competition for repeat local business is fierce, that kind of swap can matter just as much as a new opening.

Summerlin and the surrounding western valley have become some of the most active dining corridors in Southern Nevada, with resorts, neighborhood centers and standalone spots all fighting for attention. This latest reset shows how quickly the landscape keeps moving.
